BLUEBERRY MUFFIN:
∙3 eggs + 2 yolks
∙210g sugar
∙225g sour cream
∙150ml buttermilk
∙ some vanilla aroma
∙50ml neutral oil
∙50g butter
∙375g flour
∙8g salt
∙1 slightly rounded Tbsp baking powder
∙1/2tsp baking soda
∙250g fresh or frozen blueberries
1. Add sugar and eggs into a bowl and whisk to combine. Then add sour cream, buttermilk, vanilla, oil, and butter.
2. In a separate bowl measure flour, salt, baking powder, baking soda. Whisk to combine.
3. Give wet ingredients to dry. Add blueberries and fold until just combined.
4. Pour your mixture into a muffin tin.
5. Bake in preheated 350f°/175c° oven for 30 min.
