Crispy Fish Fillets
Ingredients
• Fish fillets 1 kg
• All-purpose flour 3 heaped tbsp
• Paprika powder 1 tsp
• Oregano 1/2 tsp
• Basil 1/2 tsp
• Salt to taste
• Black pepper powder 1/2 tsp
• Butter 1 tbsp
• Olive Oil 1 tbsp
Preparation
1. Sift the all-purpose flour in a large mixing bowl and add all the spices. Mix well.
2. Clean and wash the fish fillets and cut into 6-inch long pieces and allow the water to drain properly or alternatively, pat dry using a tissue paper.
3. Heat oil in a frying pan for shallow frying (or wok for deep frying).
4. Put all the fish pieces into the flour mixture and mix until all the pieces are coated by the fish.
5. Heat butter and olive oil in a frying pan.
6. Place the pieces into the frying pan one by one and shallow fry on both sides. Total cooking time would be 3-4 minutes on each side.
7. Take out and serve the crispy fish immediately.

Crunchy Onion Rings
Ingredients
• Onion 1, big size
• All-purpose flour 1/2 cup
• Baking powder 1 tsp
• Salt to taste
• Egg 1
• Milk 3/4 cup or more to adjust the consistency
• Bread crumbs as needed
• Oil for deep frying
Preparation
1. Heat the oil in wok on a medium flame.
2. Add sifted flour, baking powder and salt in a mixing bowl and mix.
3. Add bread crumbs to a separate bowl.
4. Cut the onion into 1 cm thick slices and separate the rings.
5. Add the onion rings into the flour and coat well. Take out the rings one by one and place in a plate.
6. Now add egg and milk to the remaining flour mixture and mix to form paste of milkshake consistency. If it is too thick you can add more milk.
7. Dip the rings and the batter, drip off the excess batter and add the ring to the bread crumbs.
8. Coat in bread crumbs and immediately add to the wok.
9. Fry on medium heat until golden (literally 1-2 minutes).
10. Take out and serve immediately.
11. Enjoy the crunchy onion rings with the sauce of your choice
Hot & Spicy Sauce For Fried Fish
Ingredients
• Onion 1 medium
• Ginger paste 1 tsp
• Garlic paste 1 tsp
• Chicken cube 1
• Brown sugar 1 tbsp (add more later if needed)
• Water 1.5 cups
• Butter 3 tbsp
• Chili sauce 3-4 tbsp or more
• Soy sauce 1 tbsp
• Vinegar 1 tbsp
• Lemon juice 1 tbsp
• Paprika powder 1 tsp
• Garlic powder 1 tsp
• Black pepper 1/2 tbsp
• Red food color 1/2 tsp
• Corn flour slurry (1 tbsp corn flour mixed with 1 tbsp water)
Preparation
1. In a blender, add onion, ginger and garlic paste, chicken cube and water. Blend to form a fine paste.
2. In a pan, add butter and the blended paste. Cook until raw smell of ginger and garlic paste goes off.
3. Now add chili sauce, soy sauce, vinegar, lemon juice, paprika powder, garlic powder, brown sugar, black pepper powder. Mix and allow to boil for 1 minute on low flame. Add more water if needed.
4. Lastly add red food color according to how you like the color of the sauce.
5. Now add corn flour slurry and cook until the sauce is glossy and translucent (about 1 minute).
6. Take out in a bowl and allow to come to room temperature. Serve with any fried fish recipe of your choice.
7. Enjoy!
